Roast Potatoes with Rosemary and Garlic Recipes

Ingredients : |
4 tbsp olive oil
2 tbsp chopped rosemary
750g medium potatoes, unpeeled and
quartered lengthways
4 garlic cloves, peeled and sliced
salt and pepper |
Method :
- Put 2 tbsp of the oil into a large
roasting tin, place in oven, 450F, gas mark 8, to warm through.
- Make sure the potatoes are dry.
- Mix together the remaining oil and
the rosemary, toss the potatoes to coat them completely.
- Add the potatoes to the roasting
tin in the oven, shake carefully to give an even layer, then place
the tin at the top of the oven and roast for 20 minutes.
- Remove the tin from the oven and
move the potatoes around so that they cook evenly.
- Scatter the garlic amongst the
potatoes, return the tin to the oven and cook for 5 minutes.
- Remove the potatoes from the oven,
season to taste with salt and pepper.
- Ready to serve.
