Lamb With Mint and Lemon Recipes

Ingredients :

8 lamb steaks, 8 oz each

grated rind and juice of 1 lemon

2 cloves garlic, peeled and crushed

2 scallions, finely chopped

2 tsp finely chopped fresh mint leaves, plus some leaves for garnishing

4 tbsp extra virgin olive oil

salt and black pepper

Method :
  1. Make a marinade for the lamb by mixing all the other ingredients and seasoning to taste.
  2. Place the lamb steaks in a shallow dish and cover with the marinade.
  3. Refrigerate overnight.
  4. Preheat the broiler then broil the lamb under a high heat until just cooked, basting with the marinade occasionally.
  5. Turn once during cooking.
  6. Garnish with mint leaves.

Serves 8

Lamb has been served with mint for centuries - rightly, because it is a great combination.
