Spiced Rice Recipes

For the
garnish :

spring onions
chicken
stock
tomatoes,
skinned and diced
peas,
shelled
cardamom
pods
cumin
seeds
coriander
seeds
cayenne
whole
cloves
black
peppercorns
salt
bay leaves
flaked
almonds
chopped
coriander leaves |
Method :
- Wash the rice and soak it in water
for 30 minutes.
- Drain the rice and heat the oil in
a wok or a large pan.
- Add the spring onions and stir fry
for a minute.
- Add the rice and coat all over
with the oil.
- Now add the stock, tomatoes, peas,
spices and bay leaves.
- Stir well and, when the stock
comes to the boil, stir again, then cover and leave to cook on the
lowest heat for an hour.
- Fluff up the rice and garnish with
almonds and coriander leaves.
