Smoked Haddock Pate Recipes

Ingredients : |

2 tbsp

smoked haddock
butter
double cream
lemon juice
Worcestershire sauce
black pepper
lemon slices
chopped fresh herbs, to garnish |
Method :
- Place the fish in a shallow pan
and cover with boiling water.
- Cover and simmer for 10 minutes.
- Drain the fish , then remove the
skin and flake the fish.
- Melt the butter, pour it over the
fish and mix well.
- Mash the fish, then rub it through
a sieve, or puree in a blender of food processor.
- Whip the cream until it is fluffy.
- Fold in the fish, then add the
lemon juice and Worcestershire sauce.
- Season to taste with black pepper.
- Pour the mixture into a large
round serving dish and chill in the refrigerator.
- Serve garnished with slices of
lemon and chopped herbs.
