Method :
- To make filling, melt butter in a
saucepan over a medium heat, add onions and cook, stirring for 5
minutes or until onions are golden brown and soft.
- Stir in flour and curry powder and
cook for 1 minute longer.
- Stir in cream, bring to the boil
and cook, stirring constantly, until mixture boils and thickens.
- Season to taste with black pepper.
- Spoon filling into choux puffs or
vol-au-vent cases, place puffs on oven trays and bake for 10 minutes
or until heated through.
Serves 24
Curry powder is a combination of spices
which usually includes turmeric, coriander, chili, cumin, ginger, black
pepper, fenugreek and cardamom.
