Chive Crêpes With Cottage Cheese and Caviar Recipes

Ingredients : |
120 g all
purpose flour
salt
1 egg
15 ml oil,
melted butter or margarine
280 ml
milk
60 ml
snipped chives
pinch
cayenne pepper
oil for
frying
Filling
:
450 g
small curd cottage cheese
salt and
pepper
30 ml
chopped parsley
Topping
:
60 g
melted butter
red or
black caviar |
Method :
- Stir the flour with a pinch of
salt into a deep bowl.
- Make a well in the center of the
flour and break an egg into the well.
- Add the oil and pour in half the
milk.
- Begin beating, gradually drawing
in the flour from the sides.
- Alternatively, combine the flour,
salt, egg, oil and milk in a food processor or blender.
- Process until smooth.
- Stir in the chives and cayenne
pepper.
- Allow the batter to stand for 30
minutes before using.
- Add more milk if the batter
thickens too much on standing.
- It should be the consistency of
whipping cream.
- Brush a small amount of oil on a
frying pan or crêpe pan and place the pan over high heat.
- When hot, pour in a large spoonful
of batter.
- Quickly tilt the pan to cover the
bottom evenly with the batter.
- Cook over a moderate heat until
the edges are lightly browned.
- Lift with a palette knife or
spatula and turn the crêpe over.
- Cook the other side and stack the
crêpes on a plate and keep covered while cooking the others.
- The batter makes about 8-10
crêpes.
- Mix filling ingredients and spread
on each crêpe.
- Roll up or fold in triangles and
place in an oven proof dish.
- Drizzle over the melted butter,
cover and heat through at 325F, Gas 3 for 15 minutes.
- Top with caviar and serve.
