Cheesy Celery Rolls Cooking Recipes

butter or block margarine, well chilled
lard
chilled water
squeeze of lemon juice
pinch of salt
Cheddar cheese, grated
celery, chopped
small onion, chopped
potatoes, grated
mushrooms, finely chopped
chopped fresh mixed herbs
salt and pepper |
Method :
- To make the pastry, mix the flour
and salt together.
- Cut the butter into 3/4 in cubes
and stir it into the flour without breaking it up.
- Add enough water and lemon juice
to make a fairly stiff dough.
- On a lightly floured surface, roll
out the pastry to an oblong 3 times as long as it is wide.
- Fold the bottom third up and the
top third down.
- Turn the pastry so the folded
edges are at the sides and seal the ends with a rolling pin, wrap
and chill for 15 minutes.
- Repeat the rolling and folding
process 3 more times, wrap and chill for 30 minutes.
- Preheat the oven to 220C Gas Mark
7, grease a baking sheet.
- To make the filling, mix the
cheese with the celery, onion, potatoes, mushrooms and herbs, and
season with salt and pepper.
- Roll out the pastry to an oblong,
then cut in half lengthwise to make 2 strips.
- Place half the filling down the
centre of each strip.
- Dampen the edges and fold over,
pressing them together.
- Flake with a knife and cut the
pastry into rolls 1.5-2 in long.
- Slash the tops to allow steam to
escape.
- Place on the baking sheet and bake
for 25-30 minutes, until golden brown.
- Serve with salad leaves.
