Method :
Preheat the oven to 400 degrees. In a
small saucepan, combine all the ingredients except the apples and Cider
Yogurt. Place on high heat and bring to a boil. Continue boiling,
stirring frequently, until the liquid is reduced by half. Remove from
the heat and set aside. Core the apples, but do not cut through the
bottom of each. Peel each apple one-third of the way down from the top.
Place the apples in a 2-quart baking dish. Pour the cider reduction into
and over the apples. Bake for 30-40 minutes, or until tender, basting
occasionally. To serve, place each apple in a bowl with the Cider Yogurt
and top with a drizzle of the pan juices.
